I'm just starting a gluten free diet and have also had a lot of gas if I drink much milk, so I decided to experiment with making my own non dairy milk. I got a Soya Joy soy milk maker back along the way but stopped using so much soy. However, it makes almond milk extremely easily and quickly. You can also use it for other nut milks or rice milk. It is rather bland, which is fine with me, since I don't drink it straight. I use it on my GF cereal in the morning. But the soy milk maker has recipes to add some zip (vanilla, sweeteners, etc.)

I like this because I don't know if there is gluten in the commercial non-dairy milks, in some there is, I know. This way, I know exactly what's in it. Plus, it's amazingly cheap to make, since 2/3 c nuts makes nearly 2 quarts of milk.

The soy milk machine heats the water and nuts, chops them very fine, then strains them. As a result, you are left with quite a bit of "pulp" which is actually the nut pieces that don't get chopped fine enough to make it into the milk. I've been mixing this with my GF hot cereal in the morning, but also plan to find other uses for it.

Once my job slows down, I plan to find some ways to use it in baking or things like nut loaves.
