:) Hi all, even though I live in Canada, want to wish all those who are celebrating their Thanksgiving a Happy one.... and wish I could have a slice of your Pecan Pie....hmmmmm it is something I have never made and would love to have a recipe for one to give it a try for Christmas...
also, I just love Sweet Potatoes so anyone with one of those good recipes that has marshmellows on top... I'd love to try that one too...
The only recipe I can offer back is one for Cherry Cheesesquares that I make at Chirstmas every year, if anyone is interested...

I am thankful for second chances... this fall I got one, and it has made all the difference in the world, I am more contented now that I have been in years... so this year, I wish everyone who needs to start over will get the chance...
hugs
love kim

Hi Kim, and happy Thanksgiving to you. I had a wonderful Thanksgiving with all my family coming in. I cooked the whole meal including the desserts. Tired, yes, but it was so worth it.
I have a pecan recipe you might want to try. It is very good.
Here goes:

Pecan Pie
Ingredients:
1 (9 inch) pie shell
3/4 cups of white sugar
3/4 cups of light corn syrup
3 eggs, beaten
1 teaspoon vanilla extract
1 pinch of salt
1 cup of chopped pecans

Directions:
Preheat oven to 350 degrees
Prick pastry shell in several places with a fork
and bake in preheated oven for 5 minutes.
Remove and allow to cool.
In a large bowl, combine sugar, corn syrup,
eggs, vanilla, salt and pecans. Mix well and
pour into pie shell.
Bake in preheated oven for 45 minutes.
Check after 30 minutes, if crust is getting
too brown, cover edges with aluminum foil.
When done, pie will be a little loose in center,
but will set as it cools. Do not overbake.
May serve with whip cream on top if desired.

Hope you enjoy the Christmas Season!!

Take care,
Linda
