I don't know about all of you, but I get sick of cooking all the time and occasionally need something quick and satisfying. I have found a few, and today, I tried Thai Kitchen Thai Peanut Stir-Fry Rice Noodles. I put in shrimp, chicken and chopped spinach. OMG!!!!!! It was SO GOOD!!!!!!!! It did involve some cooking, but I didn't have to think about what to eat, so it didn't take as long. YUM!!!!!!!!!!!! :D

A quickie my daughter taught me was Boarshead luncheon meats. I wrap it around carrot and/or tomato, then wrap that in big leaf of lettuce. I also tried one with pickle instead of carrot. YUMMMMMM....

I found a GF/SF tortilla to wrap all that in, but found that makes me gain weight.

I am a newbie to all this. Familiar, yes - after all my 21 year old daughter has this (severe), and as of just a couple months ago found her older sister has it... but at least the younger one has a boyfriend who LOVES.. absolutely LOVES... to COOK! I'm lucky, too. I have my daughters.

Tinkyada pastas! I cannot imagine making macaroni from scratch  and now this stuff tastes the same as the wheat variety to me. The elbow mac, the penne and the rotini are all in my cupboard!

Hi! I haven't been on here for a couple of years. I've been living in Germany. I have found that Germany has some awesome gluten free foods. They have breads that are soft and light. I still prefer to heat them or grill them, but they make great sandwiches. They have wafer cookies that taste just like those gluten filled wafer cookies in the states. Their pasta is so good that people I cook for ask if I am sure it is safe for me. They have french bread loaves that make great garlic bread or sub sandwiches. And they have pretzels that taste like real pretzels. I tried some gluten free pretzels in the States and they were tasteless and cardboard-y. They have these cookies that look like small vanilla wafers. They are pretty good too.
