Do y'all eat it? How do you prepare it? My hubby brought some home yesterday, and I hadn't had it before. It came in a roll like cake sausage, so I sliced some up and fried it with olive oil and onion powder. Dang, it was good! :D I'm looking for more ideas, though. Please pass 'em on! :)

please read the ingredients list carefully, as already made polenta may contain other cereals than corn.

buckwheat would be ok for gluten sensitive ppl, but many gluten cereals may be used in it. many already made foods could be identified as gluten free simply because they don't contain wheat, but they contain other gluten cereals. i've seen that even in very expensive certified organic foods. :confused:

Oh that stuff is GOOD - but yes you do need to read the label to make sure it's okay! You can use it as a pie crust: http://glutenfreegoddess.blogspot.com/2008/01/vegetable-polenta-pie.html or just slice it, heat it up (in oven or fried up on the stovetop) and top it with your own spaghetti sauce or roasted vegies or (my favorite) red wine and mushroom sauce. Ummm ummm GOOD! Of course you can whip up a batch yourself (I think they used to call it corn meal mush), but then it doesn't have that cute submarine shape. Plus when you heat up corn meal in water, it starts bubbling like crazy (I always get a burn - ouch). But you have stumbled across a great find, Liz, and I'll bet you'll come up with lots of ways to incorporate it into your new way of eating!

So far, no volcanic activity from the gut. ;) (That was Thursday, so I think I'm outta the woods.) Karen, I'll keep all of your suggestions in mind, too! :)

You can cut it into "steak fry" pieces & put in baking pan - drizzle with oil & fresh herbs bake till crispy on edges. It comes in different flavors, like sun dried tomatoes.
