Boilermaker Baked Beans

Make sure that the beans are cooked before baking, as the amount of salt and acidic ingredients in the recipe will keep the beans rom further tenderizing.

10 1/2 cups cooked and drained white beans
2 cups chopped yellow onions
1/2 pound tick-sliced bacon, cooked crisp and crumbled, with the drippings,
1 12 oz. bottle chili sauce
1 cup dark beer
1/2 half cup medium hot salsa
1/4 cup bourbon
1/4 cup unsulfured molasses
1/4 cup Dijon mustard
3 Tbsp packed, dark brown sugar
2 Tbsp Worcestershire sauce
1 Tbsp hot pepper sauce
1 1/2 tsp salt.

Preheat oven to 350 F

In a heavy 5-quart non reactive pot, combine all the ingredients. Cover the pot and bake the beans for 30 minutes. Uncover, stir, and bake another 30 minutes. Stir again and bake until the sauce has thickened but the beans are not dry, about 35 minutes.

Serve the beans hot, warm, or cold.

To make gas free beans...

When soaking your dry beans, put some baking soda (1 or 2 heaping tsp.) into the water!

That sounds so good. I never have much luck with cooking anymore but I remembered my mother cooking beans in a Crock Pot. That should work for me as well, at least for the first part.

One week I was determined to try and cook. I peeled some potatoes thinking I'd make soup. I already had the tomatoes peeled and waiting in the refrigerator. I waited to long & had to throw all that out.

I had some apples so was determined to not let all of those go to waste. I peeled them & even got them cooked on stove. Something came up & I left in a hurry with hubby. By the time we returned I just threw them out.

I'm not going to give up just yet but my determination is wavering a bit by now LOL.
