whats the difernece between multi and regular?
how do i do it?

With multi you can record/burn stuff to the same cd over and over again until you run out of space on the cd.
With regular you can only record/burn things once...no matter how much space it left on the cd.
As for how to do it, you need some software. Nero is one of the most popular and extensive software out there. It can be quite daunting though if you've never experienced it.
If you can tell me what you'd like to do, I can recommend more software that is geared towards what you wish to do :)

Your title is about multi session DVDs, but the link is to multi session CDs.
They're both pretty much the same thing. A DVD holds about 6.5 times as much as a CD is all.
When you write data to a DVD, you have 2 choices, regular or multi session. Regular burns data onto the disk, then "finalizes" the disk. This burns a table of contents on the disk and makes it so nothing more can ever be added to it. If you are copying movies to a DVD, you MUST finalize the disc or it won't play in any other player other than the one it's copied on.
For a multi session disc, the "finalize" part is skipped. You can continue to add data to the disk until it will hold no more. Any DVD RW is like this. The RW means re-writable, AS LONG AS it hasn't been finalized. RWs can be erased and reused for data indefinately. Once finalized, the data is permanently on that disc.

i know -this is really about dvd but i suppose the concept applies for cd as well
i have a samsung dvd recorder and nero that came with it
i made a dvd of files of radio shows i recorded before it starts it asks if i want it to be a multisession
if its an r disc it cant be multi?

Yes, R discs can be used for regular OR multi session. an R disk means you can't erase anything from the disc, but as ZS said you can keep adding until the disk is all full up.
In a regular session, if you put say, one little photograph on the disc, that's all you will ever be able to put on that disc. The only way to burn anything else to it is to throw it into a fire.
In a multi session, with an RW you can add and subtract data to and from the disc forever until the disc is full. A month, two months, a year, whatever later you can still add or subtract data from it. If it gets full, you can erase it and use it over again. (You can actually use a CD-RW as you would a spare 700mb hard drive.) With an R disc it's the same, but you can only add to the disc, not subtract, until the disc is full.
Movies on a DVD are a whole 'nuther beasty.
