OK, somethings are just better laughed at ...

I bought a prepared brisket, but I wasn't letting the Lyme take away my love of making Hanukkah Latkes for my kids.

Well, it's darn near impossible to squeeze the liquid out of the grated potatoes when your hands are claw like from lyme arthritis. The food processor was having a tantrum, and I had quite a challenge the eggs in and flour in; what a mess on the floor.

Of course, hubby requires no fat for cardio reasons ... so his had to go into the oven, which I'd never done ... almost burned the house down ... because the recipe called for a 500 degree oven and 15 minutes on each side ... but the smoke started pouring out of the oven after 10 minutes. Meanwhile, I am now trying to fry the latkes, using a gas range (new to me) and am burning the heck out of those too.

Oh well, I figure enough sour cream and applesauce should cover all my errors. And guess, what? They did. The kids and hubby said they were great. I guess it's the miracle of the holidays!

Oy, the burned frying pan and pan from the oven ... they'll have to wait til the weekend.

I have found that many chores can wait to be done!

Your determiniation is inspiring. I am so glad you were able to overcome all those physical obstacles and enjoy making latkes.

I'm thinking about making some aprons for my grandchildren - even though it's very difficult to see to thread the sewing machine needle - or see anything up close. They live a long ways from us, but I know the girls cook with their mother.

So -- not today, but maybe Monday.

Hey Lymebytes and Ginny,

Thanks for the replies. Yep, it definately felt good to do something important to me and the kids; no it was not perfect and believe me, I have made great progress that I could laugh at the whole deal. My latkes were legendary (a secret recipe handed down from my late, eastern european grandmother), so the un-evolved me could have done some serious freaking out and poor me's!

I think it's vital to try to keep up with something fun and meaningful. Good luck with the sewing, Ginny. Have you seen those little wire gizmo's that you insert through the sewing needle, then put the thread in that and you pull the thread right through. They are pennies to buy at the sewing shop and they've been a life saver for me. I'm not even 50 and my eye sight is dwindling.
