I read that by taking a colloidial form, it increases the absorption of the food eaten, by 98%. Would this help those with Gluten Sensitivity / Celiac Disease?

Research found that by taking a colloidal form, it covers the negative atoms in the stomach, to give 98% more absorption of your food.
I found that gelatin is a colloidal form. I tried taking it all sorts of ways, but it was always a bit yuck.
Then I thought that jelly crystals have a lot of gelatin in and it tasted ok. So when I remember to take it, I take one heaped teaspoon of jelly crystals, off the spoon, once a day - or, it could be made into a drink in a little hot water to dissolve the crystals and let cool, or as a jelly dessert - and is probably a lot cheaper than colloidal minerals - which I've never tried.
I wonder if this would help.
