This can be used in the place of corn starch. It is a premade noodle. Sounds great for those with corn sensitivities. :D It also is said to have health benefits. It can be used to increase fiber, reduce blood sugar and reduce cholesterol.
I can't believe that I have not heard about this before now. Got this info from St John's listserv this morning.

I'm a little skeptical about saying it replaces corn starch. Its more of a "gel" like critter, replacing xanthan gum really. I think it gives me pretty bad gas. I'll have to try it again when I'm in a better place, intestinally. You do have to go pretty easy on it at least.
I bought a big package of it, in powder form. I've also had Shirataki noodles, which is made from it.

Hmmm - "bad gas" - think I will pass. I rarely use corn starch and I don't bake, so I really don't have much use for this. Can't remember the last time I ate noodles/pasta. I just threw out a bunch of packages of GF flours that I used once or never even opened. They were all at least 2 years old and some smelled rancid. I find it much simpler to eat whole foods (except for chocolate :p )
Has anyone else tried this stuff?

Yeah, I passed it too. :lol:
It might be the sort of thing that it is VERY high in fiber and you just have to get used to it in small doses. I was thinking "flour" when I used it versus "gel". So I probably massively OD'd on it.
